Triple Dill Potato Salad

This is not your average boring potato salad.  It's fresh and zippy, and I like it hot or cold!  It is a huge favorite with Glenn's family.  In fact, my SIL asks for this for her birthday!  It's triple dill from the pickles, the pickle juice, and the dried dill.

2-3 lbs potatoes, peeled, chopped, boiled, and cooled
2 cups mayo (you can cut back, but I hate dry potato salad)
Tb dried dill (I have used pampered chef's dill mix that has garlic in it)
1/2 cup chopped celery
1 cup chopped baby dill pickles (they are crunchier than big pickles)
1/3 cup juice from the pickle jar
Juice of 1/2 lemon
2 Tb Dijon mustard (or more if mustard is your thing)


If you like onion or hard boiled eggs in your potato salad feel free to add some in.  You can also use onion powder in the dressing and it is delicious!  I like to make the dressing ahead of time to let the flavors meld.  Make sure to mix the dressing with the potatoes while they are still hot - they absorb more flavor that way!
